Zarda pulao / meethe chawal , kesar bhaat or sweet rice is a popular dish of South Asia. Zarda (Hindi: ज़र्दा, Urdu: زردہ, Bengali: জর্দা ) is a traditional boiled sweet rice dish, native to the Indian subcontinent, with (orange) food coloring, milk and sugar, and flavoured with cardamoms, raisins, saffron, pistachios or almonds. Indeed, the Zarda Pulao is a royal treat worthy of a grand occasion. You can also try making rich and tasty Shahi Pulao or the simple but satiating Vegetable Pulao.
Steps to make Zarda pulao:
- Wash and rinse the rice 2 3 times in running water and soak for 10 min.
- Put a pan on gas on medium flame and add 1 spoon ghee. Roast dry fruits in ghee for 2 min.
- Now in hot ghee add ilaichi and cloves and cook for few seconds.
- Then add 1 glass water and food color and boil it.
- Then add rice into this and squeeze half lemon.
- When the water disappear cover with lid and cook for 5 min in lozlw flame.
- Then add sugar into in and mix well and cook for 5 min. Then add dry fruits and cover. Cook for 2 min.
The zarda pulao dish is yellow in color and that's why it is called 'zarda pulao'. When the aroma from the Zarda pulao spreads, it is sure to draw out everyone from their rooms at home. Zarda Pulao is a perfect recipe for festival season. This recipe has been passed on to me by my mother, and to her from her mother, and so on! It is also called meethe chawal or sweet rice.
