I wanted to keep this lentil loaf recipe (aka vegan meatloaf) easy, with ingredients you may already have in your pantry. After doing a little digging, I was able to piece this together from a few resources. Most lentil loaf or other vegan meatloaf recipes rely on breadcrumbs to counteract the natural I might not be the first person to make a lentil loaf recipe but I think this is the only one you'll find that's made.

The ingredients needed to make Lentil loaf:
  1. Take 200 g red lentils
  2. Prepare 500 ml water
  3. Get Olive oil
  4. Get 1 onion sliced
  5. Prepare 2 stick celery, chooped
  6. Take 1 pepper, diced
  7. Take 1 clove garlic, crashed
  8. Get 130 g mushrooms, chooped(optional)
  9. Make ready 170 g cheese,grated
  10. Take 200 g wholemeal breadcrums
  11. Make ready Chopped fresh coriander
  12. Get Salt and ground black pepper

This is an amazing Lentil loaf with veggies, quinoa and spices. Use whichever spices and flavor additions you have. Ever since I made my Lentil Sloppy Joes, I have been wanting to make more recipes with lentils. So I made this lentil loaf recipe.

Instructions to make Lentil loaf:
  1. Put the lentils in saucepan and add water and bring to the boil, then reduce the heat and cook for 15-20min.
  2. Preheat the oven 180c. Prepare 1.2litre loaf tin.
  3. Heat the oil in a frying pan, add the onion, celery,pepper,garlic and cook for 5min, add mushrooms and cook for next 5min
  4. Tip the vegetable into the lentil mixture, then stir in the cheese(leave some for later to put on top), breadcrumbs,coriander.Mix well and season.
  5. Spoon the mixture into the prep loaf tin and baked for 50min after add the rest of the cheese and bake for next 5-10min. Cool in the tin for 10min before cutting! You can eat warm or cold! Enjoy!

I know that sometimes lentil loaves can be soggy. They either don't cook through or they don't slice. Smooth the top and prepare the glaze. Whisk all glaze ingredients together then pour over the loaf. This isn't the first lentil loaf I've ever made, but it is the first lentil loaf I've wanted to blog about, because it's the most successful so far.
