A quick curry for those busy weekdays. Remove from water, wash well and wipe dry. Heat half the oil in a heavy-bottomed pan till hot. Add some water to the remaining gravy to get a desired consistency.

- Heat 1 tbsp oil in a large non-stick frying pan & fry the cauliflowers.
- Boiled the potatoes & cut them into cubes. Put the paneer cubes in boiled water for 5-10 minutes & then drain the water.
- Remove the cauliflowers from the oil & in the same oil add slitted green chillies, bay leaf, cinnamon stick, cardamom pods.
- Then add chopped tomatoes, ginger, cumin paste or powder, salt, turmeric powder, red chilli powder, sugar, boiled potatoes & sprinkle some water & mix well.
- Then add the fried cauliflowers & 1 cup warm water & give a boil.
- Cook for another 5 to 10 minutes until the cauliflowers are just tender.
- Then add the paneer cubes, cover & cook. For another 5 minutes. Bring it to a simmer.
- Transfer it to a serving bowl & serve with phulkas, parathas,luchi/ puri & enjoy.
