- Make ready 4-5 curry leaves

Idli milagai podi means comfort food in Tamilnadu. Idli podi is a type of coarse spice powder that is utilized in Indian cuisine. It is basically a mixture of ground dry spices that usually contains urad dal, dried red chillies, chickpeas, salt, and sesame seeds. Idli Podi-Idly Milagai Podi is a coarse powder prepared with red chillies, lentils and sesame seeds.
Instructions to make Podi Idli:
- For Podi: Heat a non-stick pan on medium flame. Add sesame seeds and dry roast for 2-3 minutes or till they turn light brown in colour. Remove to a flat plate and keep aside.
- Add chana dal & urad dal in the same pan and dry roast for 2-3 minutes or till they turn light brown in colour. Remove them to the same plate to cool down.
- Add dry red chillies in the same pan and dry roast for 30 seconds. Add in the curry leaves and dry roast for 1 minute. Remove them all to the same plate to cool for some time.
- Once cooled, add all these to a mixer grinder. Add turmeric powder, asafoetida, salt and grind to a slightly coarse powder. Store this idli podi (spice powder) in an air-tight container for future use.
- For Podi Idli: Heat 1 tbsp ghee in a pan. Add 1/2 tsp mustard seeds. When they crackle, add 4-5 curry leaves. Stir and fry for a couple of seconds.
- Then add the idlis and mix well.
- Next, sprinkle 2 tbsp idli podi over the idlis and toss gently till the podi coats the idlis evenly.
- Fry the idlis for a minute, making sure the idlis get warmed up from inside as well.
- Serve Podi Idli hot or warm with coconut chutney and sambar.
