Combine mango, shallots, remaining coriander, lime juice and chilli in a medium bowl. Preheat a chargrill or barbecue on high heat. Aioli: In a food processor, puree the egg yolks, chile paste, sugar, and garlic. While the processor is running, slowly add the canola oil and the sesame oil until the mixture begins to thicken.

- With motor running slowly pour in canola until you achive a loose, creamy consistency. Season to taste with salt and pepper
- Add lime zest and coriander and pulse until mixed through. Pour aioli into bowl
- Can be made ahead of time, just keep in a airtight container in fridge
- Cover a serving platter with ice and arrange cooked prawns on top, serve with aioli.
